I was wanting to try this--but am curious... does molded sugar dry harder than gum paste or royal icing?
I would like really hard sugar decorations--not sure if this is the way to go. Would baking it a while make it hard??
Thanks for any advice you can give!!
molded sugar dries like a rock. Depending on what you are molding as to its' fragility.
Bowls, cups, vases, bottles, shells, bells,...when dry, are most durable.
lace pieces, other open, delicate work, is more fragile than gumpaste.
But, unlike royal or gumpaste, if molded sugar breaks, put broken pieces into food processor and whirl until completely ground then it's ready to use again.
I just use sugar and water...some recipes call for meringue powder...I just don't see the need for it....hmmmmmm maybe adding it would make the smaller pieces less fragile...I'll have to play with that one another time.
If the piece or pieces are to be colored, I add the colorant to the water that will already be used so as not to make it too wet.
I don't have a recipe. I just add enough water until it feels right...something therapeutic about playing with it...must be all that time spent making mud pies as a kid....
