Frozen Eggs..will They Still Be Good??

My fridge in the garage has gotten too cold and 2 cartons of eggs has almost froze. icon_mad.gificon_mad.gif If I thaw them back to room temperature will they still be any good for cake mixes??

Yes, you can still use them...At least I have used eggs like that. icon_redface.gif

Let us know, 'cause I've never done anything other than cake mixes like that.

Never anything like a meringue or whatever.

according to the perfect cake book eggs can be frozen for long periods of time and then be used for cooking with out any problem. Usually they are frozen in ice trays.

To freeze a lot of eggs, either seperate the white and yolk, freeze in ice trays then pop out and store in ziplock bags in freezer or beat egg slightly with a few grains of salt or sugar then freeze and store. They suggest thaw in fridge but if you need right away thaw in bowl of warm water. It says the whites will be fine for angel food cake but does not mention anything about meringue. Maybe some one else can help with that.

my fridge went on the blink once and froze all the eggs in the shells...they were fine....if the shells are not cracked you can put them in some tap water to thaw them.
