I am putting sugared fruit on a cake. My question is can it be refridgerated or should I keep it out. I am wondering how long the fruit will keep and what will keep the sugar looking the best. I am using cherries, grapes, apples and pears. Thanks in advance.
I would like to do sugared fruit as well, hopefully someone will know the answer.
When I do sugared fruit (I'm doing it this weekend for a groom's cake) I put the fruit in the freezer. I've never used apples or pears, however, that sounds wonderfully "Thanksgiving-y" to me! I'm wondering if the apples and pears are going to turn "brown" on you? I've always had really good luck freezing it and getting it out about 30 minutes before the wedding. I KNOW that requires that you be there at the last minutes, but, the results have been worth it for me. As the fruit thaws the sugar begins to glisten AND it doesn't affect the grapes or strawberries at all. I just use the cherries from the jar (drained and rinsed of course). GOOD LUCK! oh boy, now I'm nervous. I planned on having this for a cake to be delivered on wednesday and not eaten until thursday. I sure hope someone can tell me what to do. Idealy, I would have made the fruit tuesday night, allowed it to dry and put it on the cake, hoping it could weather the night in the fridge, at least wednesday night. I sure hope someone can give me some advice, starting to panic....
