I used to have a recipe for a coconut cake with a pineapple filling. For some reason, I want to think that the recipe came off a Swan's Down cake flour box. I think the cake part was the 1-2-3-4 recipe. The filling was a cooked pineapple filling. I also think (a lot of 'I think' going on here) that it was frosted with a 7 minute frosting. It has been years ago since I made this cake and I have several people requesting it for the holidays. I would love, love, love it if someone from CC could provide me with this recipe, or at least tell me where to look.

Did you check the "swan cake flour" website? Sometimes you can look up recipes there. I just purchased a box of swan cake flour no such recipe on the box. Sorry, but let me know if you find it.

Did you check the Swans Down website? I have no idea what a 1-2-3-4 cake is, but they've got recipes listed.

Here's a coconut cake, but it doesn't sound like an exact match.

um, I have a recipe for something similar, but the one I have uses Softasilk cake flour and cream cheese frosting...interested?

OHHH, Thank you, Thank you , Thank you!! I am so grateful! That's it. This is exactly the recipe I was looking for. All the ones I found on the web had a cream cheese frosting and pineapple pudding filling. Once again, thanks for everyone's time and help!
