Can I Fill Frozen Layers And Then Thaw?

I'll be working with an 11 x 15" 2 layer cake. It's sooo hard to fill then place the top layer on without breaking it. I read here somewhere that you can fill it while it's frozen, then let it thaw before icing/decorating? For real? Can it be that easy? I'm so hoping this is true without compromising anything. It's so much easier to handle that big layer frozen!

I'm doing an 11x15 tomorrow and would love to know the same thing!! Thanks for asking! I was just going to roll with it and give it a shot as I always do....

I do that with all my cakes. I even ice them afterward, or at least crumb coat them, and let them thaw. It locks in the moisture underneathe the icing.

I wait for it to completely thaw before the final icing in case it bulges in the middle as it settles, then I can correct it.

It makes it sooooo much easier to put together layers, especially larger ones!!

thats exactly how i do mine sugarmomma.. crumbcoating them while frozen is the easiest and fastest way to go.

Me too, me too! And since my cakes go right in the frig, a lot of times I don't even wait for them to thaw before decorating. I fill, ice, and decorate right from the freezer, then put it in the frig where it continues to thaw at a much slower pace - no bulges! icon_smile.gif

wow, thanks for all that. I'm nervous to do it, so I'll try on a practice cake and sew how I like it.

i do that too arosstyx; unlessi have a cake with lots of red/black or blue as it tends to run when the cake sweats
