I made a chai spice cake last week and just added cinnamon to my buttercream to make a filling. I took the cake to work and they really liked the cinnamon bc filling. I know, not very original, but it was good!

I was going to say cinnamon buttercream before I even read rcs' suggestion!

Or, you could try brown sugar buttercream, or even orange buttercream.

I made a spice cake a month or so ago with a caramel apple filling. I just took a can of apple pie filling and added caramel ice cream topping until I liked the flavor. It tasted really good together.

Mocha is good and unusual--I had a wedding cake with that this year.

I also saw someone here use fresh blackberries, and a cream cheese icing once. She said she got $4,000.00 worth of new orders from that wedding cake.

At the bakery I work at we usually use Rum Pastry Cram or Rum Whipped Cream as a filling. I've also done a Chai Whipped Cream filling that was really great (just added plain chai tea to cream before whipping).

this is so funny. I just made a spice cake for my grandmother's birthday this weekend. I used a whipped icing and added some nutmeg and cinnamon into it. It is so light and fluffy. (extra yummy!! ) icon_biggrin.gif
