Need Help Coming Up With Flavors

I am making a cake for our Church's Christmas party on December 20th.
I am making a 3 tiered nativity cake which is similar to Tuggy's Nativity cake. This will be the 2nd cake I've made for my church since we moved here, but this is going to be the first one where everyone knows who I am and it will stick in their minds, so it has to be GREAT.

Therefore, I need to come up with 3 cakes, each with an amazing filling. We're LDS - so no alcohol in the cakes. I'm definately going to do a chocolate cake (Toba Garrett's recipe) but I'm not sure waht to fill it with. I'm considering a white chocolate peppermint cake with an appropriate filling. The last cake flavor is a mystery to me. Any ideas?

I vote for a tier with chocolate cake and the Whimsical Bakehouse oreo filling. Are you familiar with that one? The flavors and textures are wonderful and definitely memorable!

A tier with white cake (with a caramel filling would be nice).

Also chocolate cake with caramel or whipped ganache filling would be good as well.

I am not familiar with the Oreo filling. It sounds delicious, can you give me a better idea of what it is like? Is it chunky or smooth? I was leaning towards raspberry but something that will set me apart from the norm is definately welcome!

I'm definately going to make the 3rd tier something less exotic simply to give someone who wants a flavor that is simple over something complex. The White cake with a caramel filling would be good. I'll keep that in mind.

What about filling the chocolate with raspberry? Either raspberry preserves or a raspberry mousse? Chocolate/raspberry is one of my favorite combos.

That's my most likely filling for the chocolate.

Right now here's what I'm planning:

16 inch Chocolate Fudge Cake with raspberry filling
12 inch White Chocolate Peppermint cake with White chocolate ganache filling
8 inch Yellow Cake with Lemon Curd.

What do you think?

The Oreo filling is kind of chunky. It's mostly whipped cream and smunched Oreos - but it tastes light and very very good! Pm me if you want the recipe! Happy flavor hunting!
