Is It Too Early To Bake For Thanksgiving?

I'm not talking cakes, so i'm not sure this is OT or not. I've been given the job of desserts this year, meaning - apple pie, pumpkin pie, pecan pie, cheesecake, brownies... is it too early to bake for Thursday? No way i can do all that in one morning!! icon_cry.gif

I'd probably start Mon night/Tues morning.

I would wait until the night before on the apple. The crust could get soggy.

I would think you could bake them and put them in the freezer. Then take them out the day before to thaw. I haven't frozen pies so I don't know if the crust would get soggy or not. The brownies would freeze great though. Or you could get them made but not baked and pop them in the freezer until the day before then thaw and bake. I hope these ideas can help.
