I need a little help.

I have a 4 tier wedding cake to make for this Saturday, Sept. I have to travel out of town for this wedding. If I ice my cake in buttercream then fondant, how long would the fondant stay fresh on the cakes?

I figured it would be o.k. if I baked the cakes on Wednesday and iced them in fondant on Thursday.

What do you think? Will they be o.k. until Saturday?

They will absolutely be fine.

My general practice for Wedding Cakes is to bake on Wed. (I don't freeze) Smooth frost and fondant on Thursday and Decorate on Friday.

Last month, I had a Wedding out of town for a big cake and I actually moved everything up by one day (beginning on Tuesday) and the cake still tasted wonderful.
