Thanks for the bump! I may try the recipe today just to see what happens if I don't hear from anyone. I'll let you know what turns out and if the cocoa powder works. I was thinking I might also try chocolate pudding as a filling if all else fails. Have you tried that?

Which cupcake filling recipe are you talking about? The almost Twinkie one I really like. I also like using the filling from the Giant Ding Dong cake.(it needs refridgeration though)
Nope, I haven't tried any fillings for cupcakes. My baking is off for a bit, until I get over the first couple phases of our diet.
I do stuff for other people, but nothing for myself, lately. So, I don't get to taste test.. heh
When I do get to bake for home, I experiment a lot. I just try everything, and if it works great, if not.. eh well, chalk it up to experience. ![]()

There's one on CC that says it's for "'old school' cupcake filling, similar to (but better than) Hostess". Is this the almost Twinkie one you like? Ingredients listed are:
2/3 c Crisco
1/2 c sugar
1/3 c evaporated milk
1/4 t salt
1 t vanilla (clear or brown)
1/4 c powdered sugar - separate
If nothing else, I was thinking I could add cocoa powder and add some more evap milk? water?
I have not tried that one. The one I use is
2teaspoons very hot water
rounded 1/4 teaspoon of salt
1 jar (7oz) marshmallow cream
1/2 cup shortening
1/3 cup powdered sugar
1/2 t vanilla
mix salt and water stir to dissolve, let cool. Mix everything else on high until flufy add the salt solution and mix makes 1 1/2 cups.
I find that I almost always double the powdered sugar to cut the grease of the crisco.
What about using some chocolate ice cream topping? If you buy a thick one like the hot fudge it works good. ![]()

I hadn't thought of that - I thought about the chocolate pudding and figured it was probably too "runny" - the hot fudge is a lot thicker. Thanks! ![]()
