Hi chocomama,
I use 2 1/2 boxes and fill 2/3 full.
If I need a higher layer cake, I collar the pan and add 3 boxes of mix 
.

The 11x15 needs 11 cups of batter.
How many mixes will depend on what flavor and brand you use. Pilsbury and BC usually make 4 to 5 cups. DH makes 5-6.
