I make 2 layers. I can't tort a sheet cake to save my life!
I have heard a lot of people suggest that if you are a beginner then two layers is the way to go. Not having known that when I first started out, I torted- and have ever since. I have not had any problems, but then again, I am the kind of person who does things unconventionally (and seems to get away with it). A month or so ago I saw someone on a Food Network Cake challenge do the same thing I do...flip the top back on from a cake board as quickly as possible and pray you have it lined up well enough!!!
