can you airbrush molded chocolates? will it hold the color or rub off?

You cannot use regular airbrush color on chocolates. The color would bead up and rub off, due to the fat content of the chocolate.
You will have to use colored cocoa butter, or make it out of clear cocoa butter and powdered color.

you have to melt the cocoa butter to about 90 degrees, then add powdered color that is specially made for use with chocolate. you can also try using Americolor Flow Coat with it. I have never used it with cocoa butter, so I do not know for certain that it would work. I have used it with white chocolate, with great success.

You are going to be hard pressed to get that stuff through a regular airbrush I can tell you that. If you are going to be doing this a lot I would suggest investing in a Wagner Power Painter with an adjustable nozzle works great for spraying that type of medium most professional chefs use them you can make a chocolate lacquer that you might be able to add color to and use a regular spray bottle.

Well actually tmriga thats a typo on my part its actually not a lacquer its more of a solution of dark chocolate and cocoa butter. They use it mainly for plate decoration by placing a template over the plate then spraying on the chocolate removing the template allowing the chocolate to harden a bit then fill the empty area with a puree or something. Sorry I misled I have the Flu my brain is a little water logged.

Wow, you sound sick. Anyway, that would be the same concept as using the cocoa butter with the powder color. I have seen it done at the NY Chocolate Show often, so there must be something they are doing to keep the nozzle warm enough to spray it through, but I don't recall seeing a hotplate for them to lay it on.
I know they used the large cup, so I am guessing they used a large needle, also.

Are we getting spraying chocolate and cocoa butter mixed up here. I have sprayed cocoa butter that has been colored through my air brush before??
I certainly would not do chcolate but just pure melted cocoa butter and powdered food color.
I have seen the wagner bit with sugar showpieces.
