A Few Things That I Don't Get... Please Help

Here are a few things that I just don't get. Any and all help will be grately appreciated.

1. I don't get how you do taste testings. I mean you need a few different flavored cakes that are little. My recipes make reg. sized cakes and I can't bake them all up just for a taste testing.

2. I don't get how you ice and decorate a cake dummy. I mean, I tried once but the dummy was so light weight that I couldn't get the frosting on it. Is there a trick to this?

I can't help with the first question but I can with the second.

I used a little floral tape on the bottom of my dummy cake and that made it stick to either the cake plate or the cake board. It held it in place enough that it didn't slide around on me and then it was just like icing a regular cake .... only EASIER!
