Hey guys icon_smile.gif

I am thinking about doing some chocolate dipped strawberries for a function on Saturday. I have zero luck with holding strawberries - once I buy them they seem to go into self destruct mode and go mushy.

How far in advance can I purchase them - how do I store them and how soon can I dip them? And, once I dip should I put them in the fridge or just a really cool room? (I have AC on it's always, always 74 degrees F)

Any help is appreciated!

Try not rinsing them until right before you need them. Water is the enemy. Rinse them, dry them (paper towels or air) and then dip and go. Dipped berries will not wait very long.

I agree with the washing bit, but I also noticed on a cake I just did, that don't put choc. covered strawberries on buttercream frosting until the last minute! Noticed after a few hours the strawberry juice (even though covered in chocolate) still oozed out.

Cool - thanks for the info!

I will hold off with the rinse until the last minute and try to do them on Friday night icon_smile.gif

Should I stick them in the fridge or just leave them in a cool spot?
