What is your idea of the best room temp for an iced cake, especially in the summer? I've done 2 wedding cakes now for clients that I've set up in 80 plus degree rooms that I was told would be cool when I arrived. I want to add a clause in my contract that I won't be held responsible if a cake "melts" after I set it up and leave if the room is too warm.

They are fine in my house which is AC at 72/74 degrees. Anything under that and I notice they have problems.

Hope this helps ~ I have had quite a few activities where the venue has cut the AC or not put it on until the last minute and of course everything does a melt down (not cakes but other stuff) Drives me nuts.
