I've been asked to do desserts for my office holiday party, where we expect about 450 people.

And the dessert budget is....drumroll please.....$350!!

Any ideas. They do NOT want cake, so I'm trying to come up with other things that are relatively inexpensive but will have great effect--and that I can make ALOT of!!

I just discovered a recipe yesterday for bunny tails? I'm calling them snow bites for this season. They are super easy and cheap! icon_lol.gif Could you do cake balls or truffles? Oh, also I am doing rice krispies with chocolate/peanut butter topping. Good Luck and if you'd like the recipes let me know!

How about mini-tarts?

Boy, they sure didn't give you much to work with! How about brownies or a party tray of different assorted cookies.

I don't understand why any one would want food for less than a dollar per person. And expect it to be grand. I wish you lots of luck. And let us know what you decided it might help us when we get this type of order.

How aboout brownie cups? I make them for every holiday and they are a hit. Just make brownie mix and drop a spoonfull in (greased well) mini muffin tin, Bake and then take out of the pan and cool take your pastry bag will frosting and swirl it on with tip 18 and then sprinkle with decorative holiday sprinkles? You can do buttercream, cream cheese or chocolate frosting and you could always color the frosting red and green.

What are bunny tails?

I *think* I'm going to try to go with a "tree" theme--basically making things I can stick on cones so it will look like there is alot of stuff, but really there isnt as much. (If that doesnt make sense, look in my pictures, I did a donut 'tree' that is sort of spurring this idea). Then I can have different sized cones on different height pedestals....what do you think?

Cake balls would work great! I can put them on a tree.

Rice krispie treats are fun too--"kids" of every age always go nutty over them!!

For large quantity orders I typically do mini-cupcakes with just a 1M tip swirl icing and some sprinkles, but that might interfere with the 'no cake' restriction. Please let us know what you decide! Good luck!

cookies, mini cheesecakes, brownies, fudge, and pies all come to mind.

A pie can feed about 8-10 people I would think. And not everyone will eat dessert.

During the holidays I always make pumpkin brownies, they are so delicious. You make them in a big (???I can't think of the name-brain freeze) a big sheet pan with the short sides. Anyway, they're "thin" like a brownie, but they're really a cake with creamcheese frosting. You could cut them up in smaller pieces.

Why let the customer set the price?? Tell them for about .25 more per person they can have a dessert that is worthwhile but at .78 per person they are gonna get something too cheap for a Christmas party. I've had to do this before...

Trail mix and chex cereal, mixed through chocolate and shake in Ziploc bag of powdered sugar. Place in buckets or bowls. Just an idea..

Mini Creme Puffs, with drizzled chocolate. You can make the puffs ahead and freeze. Just pipe the puffs no larger then an inch, about the size of a cake ball. You could dust them with powdered sugar or cocoa also. Mini carrot cake cups with orange cream cheese icing.

These are some great suggestions. THANKS!

I should clarify, its not "no cake" as in nothing cakey, its that they had a bunch of different whole cakes last year, so they dont want cakes that everybody slices and takes a piece...

I was shocked at the dessert budget because this is a huge event--but I guess they focus on the bar and the food (they have raw bars, carving station, passed hors deorvues) and dessert is just an after thought.

Thats not how *I* plan a party (where I could pretty much care less about anything other than the chocolate features!!) but I still think I can do something exciting for cheap...they do know that I usually dont do anything for less than about $3 a person...but I figured as long as I keep it SIMPLE, some money is better than no money. (Are those the words I'm going to eat later?!?!)

THANKS!!!
