Question About Storing A Cake..please Advise!

I am making a white cake with the cookies 'n cream filling from this website tomorrow (whipping cream, cookies). The lady is not going to eat it until Sunday...will the cake dry out terribly if it is refrigerated for 2 days??? I hate when people pick up cakes this early, but she is from out of town and this just works better for her.

Do you think the cake will be okay that long in the fridge? It will be iced in buttercream. I know there is no way around it, because the filling HAS to be refrigerated.

Would it be possible to make and freeze the cake layers; make the b/c frosting and whipping cream - but not add oreos or assemble the cake until Sat. night or Sunday morning.

Otherwise, what choice do you have but to refrigerate because of the filling.

If you are using whipping cream and oreos you need to refigerate the cake.

I think you can refrigerate the cake for 2 days but due to the filling the customer has to be prepared for the possibility of the cake getting a bit soft or soggy.

Thank-you, both! Do you really think the cake might get soggy?? UGH!

I hate to steer her from that choice because she already took a week to decide what flavor she wanted in the first place, and I don't really feel like wasting my minutes waiting on her!

GRRR!!! what to do....
