Hi all! I'm moving to the Kissimmee / Orlando area in January and I am hoping to find a professional decorator that I can work under. Yes, I've taken the Wilton courses and learned most of what I know from fellow CCers. As of now, I do this as a hobby. However, I am very much interested in working with a pro to teach me more. If you are moving to the Orlando area, you may as well go to the Notter School, right there in Orlando.
Ewold Notter is a world-reknowned, champion pastry chef. His classes are incomparable.

I think your cakes are excellent. I agree with tmriga that the Notter School is great it is also expensive. I work at a hotel in the Lake Buena Vista area and my pastry chef teaches a class every Wednesday at Valencia Community College you may want to look into. He is fantastic and he just won ACF Pastry chef of the year. I ask him questions all the time and I wish I could show you some of his work.
