I prefer to learn from others successes...
Has anyone ever made tres leches cake (traditional Mexican favorite that is extremely moist) in a cupcake format? If so, how did the paper cups hold up? Or are the foil cups stronger?
My usual recipe is so moist that it is served from the 9x13 pan it is baked in as there is no way it would hold up to stacking and decorating.
Thank you in advance for any lessons learned!
Judging by the responses...looks like this will be a first...
If anyone wants to know how they turn out, just pm me next weekend. ![]()
I'm sorry, I'd be curious to know how it turns out... what exactly is a tres leches cake? I'm guessing three milks, but how?
The quickest description: like eating bites of a cloud...
Generally, a light cake that has baked, cooled, then a blend of milk(s) is poured over until the cake can absorb not a single drop of moisture more! Usually frosted in a whipped cream topping.
oh wow!! You'll have to send some of those to the northeast!
In that case, I would think the foil cups would be your best bet. you don't even need cupcake pans with those, so they're plenty sturdy! I think the ones I used for regular cupcakes were made by Reynolds.
checks this out http://cakecentral.com/modules.php?name=gallery&file=displayimage&pid=1013793 they look very good and they are put in the hard foil cups, i really don't thing that the paper would hold up cause of the milk that would go to the bottom and then it will make it too soft.
ask rosely for her recipe and she if you like it.... and let us know what you think i'm going to try it this weekend..
shaddi
(i had to edit cause i forgot to put the web page for the photo of the cake)
Thank you, Shaddi, for the tip on Rosely. Her picture was perfect and I have emailed for the recipe as you suggested.
And thank you too, beachcakes. I didn't know about the hard foil cups -- so I will start looking tomorrow. Those are the ones that Rosely has in her picture too. If I thought they'd ship, I send some to you! ![]()
If I can pull this off, my friend will be very, very happy.
