I have an order fro a choclate cake with Bavarian cream filling and fondant...I use MMF and dont know if its different from regular fondant...The actual party is on Sunday, they want to pick up the cake Saturday, and now that I have every thing put together, I was getting ready to MMF and realized that the Bavarian Cream HAS to be kept in the fridge and the fondant cant because it sweats... What do I do? Can I MMF the cake and still put it in the fridege or what? They want to pick it up Sat so even if I waited until then to MMF and decorate the cake will still have to be put in the fridge after they bring it home overnight anyway...Any suggestion? Theere has to be a way to have both MMF and cream?

I've used the bavarian cream that is sold at cake supply stores that come in the plastic sleeve. It does not have to go in the fridge and tastes yummy! So it works wonderful with the fondant.

Hello,

I have put mmf in the fridge before and although it does sweat once taken out it goes back to the way it was before I put it in the fridge. HOWEVER I have only used one colour so I don't know if the same would apply if you have various colours as they may run, I hope I am explaining myself OK

I have put colored mmf in the fridge and yes it sweats then goes away and no running of colors.. I am decorating a cake now that has different colored fondant accents and will have to put cake in fridge til tommorow due to my filling. I don't anticpate any problems seeming how I have done that before. I have never used red though. But have used dark blue and have had no problems.....
