I probably know the answer, but I'm checking anyway... Should I refrigerate my cake with a choc. ganache filling? I whipped a bit of leftover ganache and used it for a filling. Do I have to refrigerate the cake? Thanks.

I just learned a while back that ganache is pretty sturdy and can be left out for a couple of days. icon_smile.gif

You can leave it out for 1-3 days at room temperature and it should be fine.

Yeah, just don't leave it in the direct sunlight. icon_wink.gif

Thanks all! I was a bit worried and had an awful dream that I woke up to find my cake covered in, well, lets just say you wouldn't want to have eaten it then... icon_smile.gif (all green and fuzzy! -- Ha ha ha!)

It's also covered in fondant and it's just the filling. I wanted something different to fill my cake with and I had enough Ganache left over but not enough for a cake so I thought I'd try it as a filling. It was just for my class III package cake.

Thanks again!
