Anyone have a really good coconut cake that dosen't have to be refrigerated? Help.

i think once it has the coconut milk in it it will need to be refrigerted. unless maybe you use an oil.

I used coconut coffee creamer in place of the water in a regular cake mix. It was delicious! Just an idea icon_smile.gif

DH makes a coconut cake mix, you can also doctor it up with a box of Jello Coconut cream pudding. It is very good.

Here is the recipe I use:

1 yellow mix
1 box of coconut cream pudding
1 1/4 cup milk
3 eggs
1/2 cup oil
1 tsp of coconut extract

It is yummy and i have had several specific orders for it.

Thanks for all the great ideas. I'll start experimenting before I have to have it. Cakecre8or - do you use the boiled icing with coconut pressed on that?
