Does anyone have a good trick for getting the batter into the cupcake pans without making a mess? I tried a decorator bag... bad idea, it is too thin and oozes and is messy to fill.

I use my cookie scoops. It seems to give a lot of control over where the batter goes, and also helps me to make all of the cupcakes the same size.

I've used my ice cream scoop, it does well. I've also used one of those candy funnels. You can open and close it to stop the flow of the batter. I bought it for when I make my 3-D lollipops, but it works well for cake batter too.

I will say, I like my ice cream scoop better, though. I'm not sure why, I guess because it's faster.

I bought mine from Wilton, but you can probably find them on a lot of the supply websites. The funnel might be better for the mini cupcakes, since less batter comes out.

Hope this helps,

I use a 2-cup measuring cup for cupcakes. For mini stuff, I use a 1-cup (better control).

I also use a spring-action scoop. Same amount every time.

I've tried the funnel that Hollyanna described, but I'm far too uncoordinated to get the timing of the open/close just right. And, I'm just as big a slob when filling the funnel as I am filling the cupcake tin. Your mileage may vary. icon_wink.gif

I use the PC cookie scoops. The small one holds right aroung 1T and is the perfect size for mini cupcakes. The large one holds 3T and is perfect size for a standard cupcake.

I'm definitely going to try the Pampered Chef scoops next time I make cupcakes. Sounds like it would be less messy! thumbs_up.gif

I love the funnel for this, same one as pp suggested.
