Help!!! Anyone Have A Recipe Or Idea For Key Lime Icing?

I have a bride coming in for a tasting on Saturday who thought that key lime icing would taste good with coconut cake. I don't offer any kind of key lime icing but I was feeling nice that day and said sure. I didn't see anything in the recipes section. Any suggestions?

I think this would be too runny for an icing, but I would suggest maybe adding more cream cheese to the recipe so it will be more stable. It is so good. I used this for a filling for white butter cake, and a cream cheese frosting, and this is now my big requested cake. I think it would be a hit!

Thanks for the help. I'll look at both recipes and see what'll work best. If anything I could use it just as a filling and cover the cake in buttercream. Thanks again!

I did this for my niece's wedding cake and it was hands-down the favorite cake layer. You'll love it!

I replaced the water with lime juice, but remember the icing will not be green like most people expect it to be. You may want to add some food coloring if you want a green color. I did that for my margarita flavored cupcakes. I've also added lime pie filling to my buttercream for a delicious filling. It may also work well for a frosting. You can see the cupcakes in my photos. You could make lime curd and mix it with your BC or just use it as a filling and frost with BC.

This is a lemon BC recipe I use but replace with lime juice and it should work perfect. It also will not have flecks of zest in case you need a white icing.

4 cups powdered sugar
1 tablespoon of milk
3 tablespoons of lime juice
1/2 cup(1 stick) of butter

I have sub'd key lime juice for the liquid in my buttercream and used lime curd as filling and have received rave reviews. It works best with a crisco or 1/2 crisco, 1/2 butter recipe rather than all butter.

Thanks for all the help. Also is there a noticeable difference between lime juice and key lime juice? I know they are two different things but do you think that people ask for key lime b/c that's what they always hear but wouldn't know the difference. I only ask b/c I wouldn't know since I've never eaten a key lime pie or anything along those lines!

The Cake Mix Doctor has a recipe in her Cupcake book for Key Lime Cupcakes. She notes that Key Lime juice is "fresher and more tart tasting." I don't know that I've ever noticed a difference, personally, though. (Apparently, the limes we usually get in the store are Persian Limes.)

When I make my key lime cheesecake, I use fresh limes (and sometimes a little lime juice out of the bottle that says fresh lime juice). It is spectaular with regular limes. In my opinion you don't have to have "key limes" although some will say you do. I think you could use one of the lime fillings but also substitute some lime juice for the liquid (or use lime extract) in your buttercream and have a great cake! I used lime juice in meringue once for the top of key lime cupcakes (from the Cake Mix Dr) and it was great. Sweetened condensed milk mixed in somewhere would be great too!
