Cutout Letters And Numbers? Fondant? Gumpaste?

Hi everyone,

I am going to try to make a cake for my son's first birthday. I am going to do a two layer stacked cake with a rubber ducky on top. My cake skills are okay, but my writing skills are terrible. I'd like to put a number one standing up on the top of the cake and then cut out letters (out of fondant, maybe) to adhere to my buttercream.

How do I do that? Where can I find the letter cutters and what should I use? Gumpaste or fondant?

I would use fondant for your letter cutouts. You can use the alphabet cut outs (look like mini cookie cutters) that Wilton makes. These should be readily available or FMM makes Tappits that are great for cutting out letters. I used the FMM ones on the Diego cake in my photos. They make a couple of different letter/number styles. Whatever you use, I found that it helps to roll your fondant out and let it sit for a few minutes. When you cut it out, it will retain its shape better and is easier to remove from your cutter if it sticks a little. A little powdered sugar to dip your cutter in helps too!

Thanks so much! Would I also use fondant to make a stiff number one to set upright on top of the cake? Or would that be gumpaste?

I'd use a fondant/gumpaste 50/50 mixture. Be sure to have a few days for it to dry!
