Okay, I'm covering a cake in MMF. The filling of the cake has whipped cream in it, so it's perishable. Can I put the fondant-covered cakes in the fridge?...or will the fondant get all soft and goopy? I know most people just leave them out because the fondant 'seals' everything, but there's whipped cream in this one...is it okay to leave it out?......HELP!!! ![]()
I think with the perishable filling that you really don't have a choice but to refrigerate it. I think the fondant should be fine. I had a cake recently that had some fondant decorations on it, and it did just fine in the fridge. Maybe someone out there with more experience will chime in soon. If I find out more on this, I"ll certainly let you know! ![]()

Okay, I searched out several threads on here and it seems that most folks do refrigerate their fondant covered cakes without any problems. The cake may sweat some once you take it out but will dry in a short time. Some other tips I read about this: humidity plays a big part in fondant quality, and I see you are in Canada, so I'm assuming humidity is not a big issue for you. That's one good thing! Another factor is the brand of fondant used. Using MMF you should be fine. Another couple of suggestions given were to place your cake in a separate fridge, if you have one available, that is set to the lowest cooling temp. so it will chill but not get so cold that it sweats on coming out, and finally keeping it in a box or covered with a cake dome should protect the cake further from condensation. Thanks for the responses, Robin! I looked through all the threads too, but I couldn't find exactly what I was looking for. I am in Canada, but the humidity is a big problem in my area....I'm on the coast (we don't get snow, but a lot of rain, especially lately!!) I've put some cakes in the fridge with MMF decorations on them, and they get kind of shiney & droopy.
I do have a seperate 'cake fridge' but I'm starting to think it's a little on the humid side....I think that's a good idea though, to put it on the lowest setting. Darn that yummy cookies & cream filling!!...this is starting to be a big hassle! ![]()
You know, it's funny you should mention that it's cookies and cream filling-- I have a fondant covered cake to do this week, with.....yup, you guessed it, cookies and cream filling!
There is no way I will be able to fit the cake in the fridge so I had to improvise on the filling-- instead of using whipped cream, I will be using icing. Not as great as the whipped cream version but, well, ya do what ya gotta do. Actually, I just remembered that there is a whipped cream buttercream recipe on this site, and it doesn't have to be refridgerated! Ahhhhh! I may just have to reconsider this....

You have just given me one of those "oh yea" moments, I've always been paranoid about "odours" getting into my cakey things stored in fridge (even when covered well) and your comment on "separate fridge" made me think I ought to look for one of those mini fridge things that the men love to store their beer in and see if I can get one just to keep my frostings etc in, I dont have room for another regular size one....no more worries on "odours"....thanks Icingpraises for giving me a little "light bulb" moment.....sorry for digressing on the topic ![]()

I havent done many cakes, but i have put my MMF covered cakes in the fridge with no problem..
Most fridges have a coolest shelf and a cool shelf. In mine its the bottom shelf that is cool so i put my cakes there.
(I think on the coldest shelf the MMF goes too hard so thats why i put it on the cool one).
Also it usually looks shiny in the fridge but when you take it out when its needed it goes back to normal.
