What Kind Of Storage Do I Need.

In making plans for my snug little commercial kitchen, I'm wondering what sort of storage is going to prove most useful: rolling racks, Rubbermaid tubs, plastic drawer units. I know I'll need at least some built-in cabinets and lots of counter space. What else?

Open racks-- for storing bins that you may want to stack, tubs of crisco, etc, and other stuff that's better left out in the open because it's easier to clean should it spill. A floor-to-ceiling open steel shelving unit is what I'd reccomend. Rolling upright bins for flours and sugars-- also useful. Tables with a space underneath them for storing things right there.

Get tons of plastic storage bins in various shapes too, you'll constantly be using them and they're very handy.
