can anyone give me tips on how to get my cake to rise to a normal height.
I am in a decorating class and we brought cakes to class and mine looked like a single layer cake compared to some of the students. any tips would be greatly appreciated.

Here are a couple. Put a little merigune powder in your cake mix before baking, Use the Wilton bake even strips, and the last one I know is when you fill your layers it also adds height. Or you could always get the 3" pans.

Keep in mind that if you are using a cake mix, it generally only makes 4-5 cups of batter. If you are using 9" rounds, that is barely enough batter to make one 9" round if you want it to be 2" tall! Use more batter or smaller pans, and refer to this chart for the amount of batter you need for each size cake pan:

Hi! is this Jen from the Fantasy in Frosting class? If so..Im Kelly..i sat next to you yesterday heheehe. I hope you find this site as helpful as i have so far!! And as far as the cake..my cakes were soooo flat before too. The things i did different w/ my cake from yesterday was using the bake even strips and i used more batter. I got a Cake Extinsion recipe online here... i will try to find it..if not i will bring to class. But it makes more batter and tastes way better to me i think. But the extra batter it makes made my cake a "normal" thickness.

Aren't you supposed to go by the size of the pan, I mean, only fill it to half full? Is that right?

I fill my pans 2/3 full. You can extend a cake mix easily with a Jiffy cake mix. Just use it with the water and egg stated on the package. I use the enhanced cake mix recipe from this site too but the Jiffy is quick and easy when I just want a couple more cups of batter. They come in white yellow and chocolate.

I think just make sure you have enough batter in each pan. It sounds like you didn't have enough in your pan. I also fill my pans just over half way and they will rise to the top.
You can use 2 separate pans or one big (deep) pan and torte.

I agree with CarolAnn, i go 2/3 full with my batter. Always get a nice full cake and I even get leftovers to make cake balls!

So I've been using the cake strips and although it makes nice, almost completely even tops, I still don't get the 4" hight I'm aspiring to. I have even torted each layer twice, filled with buttercream and the most I got was 3". It just hit me the other day that probably to get to the 4" I need to bake 3 cakes and tort them. Oh well!

Pd> Some people do collar their cake pans and say their cakes rise to 4" if you bake them in a 3" pan. Haven't tried it yet.

I tried to collar with parchment the other day, and it was a huge, frustrating mess. I gave up!
