Good question. I have almond paste but I don't know what to do with it.
If you are talking about marzipan, then yes, you can model with it just fine, but it has to be a certain grade of marzipan (high powdered sugar content to almonds, I think a 1:3 or 1:4 ratio).

I knew there was a difference between marzipan and almond paste because they are packaged separately but sit beside each other in the grocery store. So I did a bit of web checking and this is what I found.

Both Almond Paste and Marzipan have the same ingredients; almonds, sugar and glucose.
Marzipan is milled to a smoother consistency, and has more sugar. Because of this, Marzipan is more pliable. This allows for easier rolling out and modeling.
Almond Pastes higher almond content gives it a stronger flavor. It is used as an ingredient in baked goods.
So you need a recipe to use it in.
