How To Ganache On Smbc Covered Ice Cream Cake... ?
Decorating By Jopalis Updated 16 Sep 2007 , 6:26am by katwomen1up
I am planning an ice cream cake made in Betty Crocker dome cake set. I want to decorate it like a sundae.
What I need help with is the procedures at each step.
Bake cake, fill with ice cream, cover with ivory SMBC (quickly before ice cream melts) or should I just freeze unfrosted cake with ice cream in the center?
When to apply SMBC? Before or after freezing cake?
When and at what temp to apply drippy looking ganache? Can the ganache go in the freezer after applied?
Then I will pipe on some stabilized whipped cream, cherries, sprinkles, etc.
I need to know when to do what? Tricky with ice cream center.... Thanks for help....

Jopalis,
You want to freeze the cake first. You can put the icecream in two different way's denpends on round or square? I let the icecream get a little soft, put plastic wrap on the bottom of the same size pan put the soften icecream in and smooth. Put in as much as you need, it depends on how much icecream you want. The plastic wrap will make it easier to pull out of the pan and put on the cake. (Make sure all of the plastic wrap comes off the icecream when taking it off) I Smooth the icecream so it's level and pop it back in the freezer. It will also be the exact size. I trim a bit before I put it on the cake so I can make a damn with the frosting so it doesn't leak out incase I have it out too long. If it's a square cake you can get the icecream in the square boxes and cut to the thickness you want and put in right between your layers. When frozen, put your cake and icecream together crumb coat and pop back in the freezer. When set frost and decerate. If you have the cake out for too long while frosting and decorating just keep popping it back in the freezer. The more natural the icecream the faster it will melt. Don't use any of the churned icecream (lighter) these melt faster.
After this sets pour the ganache, sprinkles and cherries and anything else you're going to use.
