Can You Freeze....

Hi Can you freeze buttermilk? I had to purchase a whoe box for a recipie I did and I do not need the rest right now? How long can you freeze it for?
Can you add it to a cake mix....I use Duncan Hinzes...what will happen if I add that instead of water? Thanks Jen

When you freeze dairy products, liquid ones that is, the fat separates from the water and will remain separated when it thaws. A lot of the proteins stick with the fat too. Not sure how that works if you've got non-fat buttermilk, but it won't work for the low-fat variety. I would say no on freezing, but probably OK to add to cake mix. It shouldn't be enough fat to throw off the recipe too much.

For future reference, I found a buttermilk powder near the cocoa powder at the grocery, you mix it with water for cooking. It works realy well in cakes and keeps for quite a while in the cupboards. Its cost about like a gal. of buttermilk but... it last a long time .. Hope that helps for the future
