First Time For Mmf?

I've never used fondant on a cake, but I really would like to try the MMF recipe on this site. I've read different posts that make reference to the fondant drying out and becoming brittle. My question is once you put it on the cake how long will it be before it dries out? Do you have to keep it covered after you finish the cake? How far in advance can you do the cake?

no it doesn't dry out like that- at least not on a cake . once you have put it over BC or whatever your base is you really cant cover it or it will get sweaty and soft.

if you leave it out in the air after say molding it or making bow loops it will dry fairly well.

You probably should cover any extra fondant while you are working it.
but not the cake itself.

say you covered a cake and then where cutting shapes to place on it - i would cover the pieces and the extra fondant until you actually get it on the cake-make sense???

don't cover the fondant covered cake though 'cuz it will become a sticky gooey mess.

oh and.... once the cake is covered it really protects what is inside -so assuming you dont have aperishable filling you can do you cake well ahead and it will stay nice and moist inside
