I made a pineapple pound cake recipe earlier this week. While the texture was great and it tasted good, I want to make it again and enhance the pineapple flavor. I didn't find that the pineapple flavor came through enough to be recognizable. This led me on a mission to find a pineapple extract. I found on McCormick's website that this flavor was discontinued in 2005. I stumbled upon Watkins brand products. They have a good variety of extracts, including pineapple. While I've heard of this company for years, I've never used any of their food products. Has anyone tried the extracts? Would love to hear your feedback before I place any order. What other brands and/or websites can you recommend based on your experience?

Thanks in advance.

I would suggest you avoid artificial flavors of any kind. They always have a back flavor that ends up tasting like cough syrup ( at least the fruity ones). If you want to increase the flavor in your pound cake, I would suggest using something like Monin or Torani syrups. They are available in an endless array of flavors, most of which are natural, and can be used both in the batter and to brush a warm cake for extra moistness.

You can also use Loranne's oils they have tons of flavors. They are the little bottles that you use to flavor hard candy.

National Flavors has a natural pineapple (with other natural flavors), but the minimum amount is 1 qt.

Or you could try adding icing fruit to your batter:

I use watkins, have all the flavors and they work good for me. The vanilla is excellent in my opinion. I use them also to make flavored waters.

For extracts, I love Neilsen Massey (spelling?) pure lemon and orange extract. They smell just like the fruits. When I am making a pineapple cake, I substitute some of the water for pineapple juice. I haven't used a pineapple flavoring.
