Can you make a curd out of persimmon or mango? I'm sure you can. I found a mango curd recipe on epicurious, but reviews said that it was too lemony. Most curd recipes I have seen have been citrusy or acidic. I bagged and froze 8 cups of persimmon pulp and 8 cups of mango today, and was hoping to maybe try a curd or 2...

I've used this curd quite a bit in the past.
Mango Curd
Ingredients:
3/4 C Sugar
2 Tbsp Cornstarch
1 Cup Pureed mango
1/4 C Butter
2 Tbsp Lemon juice
1 Tbsp Orange zest
6 Egg yolks, beaten
Instructions:
1. Combine sugar & cornstarch in a pan.
2. Stir in mango, butter, lemon & orange zest.
3. Cook over medium heat until thickened, stirring constantly.
4. Stir 1/2 of the hot mixture into egg yolks: stir the egg yolks back into the hot mixture.
5. Bring just to a boil. Cook 2 minutes, stirring constantly.
6. Spoon into a bowl and cover with plastic wrap. Chill until serving time.
thanks! I made mango tartlets for thanksgiving and they were really good! i didn't have any oranges so I omitted the orange zest. Tasted a lot like fresh mangoes! I think I cooked it a bit too much, but it was still great...especially with a big squirt of whipped cream on top! Thanks again! ![]()
