I just bought the Wilton book pan and was wondering if 1 box of cake mix will cover it.

Did you buy the smaller one or the biggiest? one box i imagine would be good for the smaller one but if you bought the larger one then definitly 2 boxes just eye ball it if the batter looks to thin in the pan add some more.
