Strawberry Filling Question

If I use an all fruit jam filling, does the cake need to be refrigerated? What if the jam has already been opened and in the refrigerator? I am thiking of making a cake with this kind of filling and wanted to make sure of things first. I won't need the whole jar for this cake (it's only 6") and need to know if I can use the rest at a later date. TIA.

I have left jam-filled cakes out overnight. No one has been sick because of it, however I haven't sold them - it's only family. (That sounds like I don't value my family!!! But, you know what I mean!)

Can you use the jam later? I don't know why you couldn't provided it isn't months later. We go through jam like water around here, so I can't say I've ever had that issue.

The unused portion should keep well in the refrigerator for a couple of months--I've had some longer, and it was fine.

As far as the refrigeration on the cake w/ such a filling--I've been told that it needs to be refrigerated. At the same time, I would think several hours out of the refrigerator wouldn't hurt it. I suppose it depends on how quickly it is expected to be eaten. (W/ just my husband and I, we would need to refrigerate as it would take a week to eat the cake. In a party or big family, it might be OK left out as it would only take a few days.)

Can I use refrigerated jam in a cake though and then leave it unrefrigerated for 2 -4 days?

I wouldn't think it should hurt anything. This is how jellyrolls are made and they are fine left out for a few days.
Not having ever done this I can't be for sure but I wouldn't think it should be a problem.

When you buy jam at the grocery store it isn't refridgerated, so keeping it out in the cake should be fine. It has preservatives (preserves) so it should be ok.

I wouldn't leave it out for two to four days. If you read the label most jams/jellys say that you must refridgerate after opening. While they do have a lot of preservatives in them that only will work effectively when the jar is sealed, thus keeping the bacteria out. After the jar is opened and the jam is exposed to the elements bacteria will get into it naturally and it can spoil.

If the jar says to refridgerate after opening I would not risk it and leave it out. Food poisoning is HORRIBLE tapedshut.gif

Jams and jellies in the grocery store are sealed. When you open them they make a fffffffffwip sound - that's the seal breaking. That's why they can be out unrefridgerated. Once opened, they need to be kept in the fridge.

I think a few hours isn't bad for it to be out, but 2-4 days, no. Too long.

I know from experience that if you leave out a jam filled cake for 3 days, the filling tastes a bit fermented. No one here got sick from it, but it didn't taste quite right. It didn't go bad until the 3rd day, though. I wouldn't have served it to any company! icon_wink.gif

You could call the 800 number on the back of your jam jar and ask them.

Let us know what you find out, and what happens with your cake.

I've been wanting to use strawberry jam for a cake filling also, but have not because I was unsure of the refrigeration issue like you.

I've decided to keep the cake refrigerated. I obviuosly don't want people getting sick. Thanks for all the advice.

There is a great fruit puree filling recipe here... from melysa- no refridgeration needed!!
I've been trying to attach it to this message, but no luck. She recommended it to me and I substituted strawberries for the rasp. I didn't put them through a sieve, because I wanted it to have a jam-like texture.
The results were great!! You can probably find it if you look for Raspberry Puree Filling in the fillings section.
