I'm doing a birthday cake in a few weeks and would love to do a ganache cake.... only problem is that I know absolutely nothing about it. How in the world do you cover a cake in it? Do you just pour it on until it covers the entire cake? Does it dry hard? Do you need icing under the ganache?? Any help would be greatly appreciated. Thanks.

Ganache is pretty easy to work with, doesn't dry hard, per se, easy to make.

I like this recipe:

Just make sure your cake is smooth as ganache isn't as forgiving as buttercream. I use a serrated knife to even out the sides of my cake, use a couple of tablespoons of ganache to crumb coat, let it set up and then pour on the ganache. Try to do a minimal amount of messing with the ganache once it's on the cake.

You'll love it! good luck!
