Can You Carve Cake Dummies?

Okay, never used a cake dummy! Can you carve them (for like a 3D/sculpted cake)? thanks!
If you are using the compressed pill type of styrofoam, yes, you can carve it, but it takes a lot of work, skill, and tools.
I carved some dummies for a project that I wanted to do last year, and it turned into a snowy nightmare in my step-daughter's garage. I needed a hot knife, a serrated knife, and three different sizes of sanders to achieve the look I sought.
I doubt I would ever do this again, unless I started competing.

hmmm that doesnt sound pleasant. I thought I saw someone talking about floral foam?? Did I remember that correctly?
I carved styrofoam cake dummies for my state fair cake. Granted, they weren't the hardest shapes-a helmet and a triangle-but it was not difficult, just time consuming and SNOWY is right!! This is NOT a project to tackle inside! I just used a serrated knife and then a fine sanding block to take care of the rough spots. It's in my photos.
If it were a sculpture with a lot of detail, I probably wouldn't want to use styrofoam. I don't know if floral foam would hold up well and it would be even messier-green pieces stuck to everything-yuk!
