I took the big step and made the mmf for my daughters 8th birthday cake. I did exactly what the recipe called for and let it set overnight and just about said every curse word in every language I know them in (in my head, of course!) trying to knead in purple food coloring, only able to get it marbled at best. So here's the big question: If I know exactly what color I want to use as a base color, can I just color the marshmallow before I mix the goop into the sugar?

Yes it's much easier if you color the whole batch BEFORE while it's hot. If you're going to use different colors then you color it after the mix is done and it sits for a while. Just divide in pieces and knead color in, but if all the MMf is gonna be one color do it before while marshmallow is still warm.

Wandy,

thanks for the reply! Since I know I can add the coloring to the goo before I add the sugar, have you ever tried making mini-batches? I'm thinking that inste3ad of mixing all of the goo at once I can use smaller amounts to make the colors I want?

Wow, so I'm not the only one that's been doing it the hard way?! Mixing the color in before the sugar is going to be so much easier.

I did it the "hard way" once and leave it to my DH to say... why not put the color in when you are mixing it? Let me tell you how dumb I felt!! icon_cry.gif

LOL..I also did not think of putting it in before the sugar. Although, what I've been doing is making a large batch of MMF (marshmallows w/ sugar), wrapping it up in smaller batches and then when I need some I just pop it in the microwave for 20-30 secs till pliable and then knead the color in. It does take some work..kind of like kneading bread, but I've been able to get the color uniform and all the physical work is kind of therapeutic in a weird wayicon_smile.gif

Wondering too, if you can judge the outcome of the color if you put it in before adding the sugar? Still a good idea to get the color started though! The things you learn!

Ditto, here! I added color afterwards... Luckily, I was only making flowers and didn't have to knead a whole lot, but it still took work...

So, when we melt the marshmallows and while still hot, I mix in the color and stir.....? Then add the sugar?

Hmm, I've never thought about the colored marshmallows. But do they sell them in individual colors? I thought it was just assorted colors in one bag. Let me know.

Well let me see if I can explain this well...
For example if I'm making decorations for a cake like different colored flowers and leaves I do it in stages. I do the MMf completely let it sit overnite (at least an hour is good) the next day I divide it depending the colors I need. I start coloring and kneading you can microwave it if its a little dry -I think 5 to 8 sec are enough- If it's sticky I use cornstarch for light colored fondant and crisco for darker colors so the colors won't be affected.
But if the MMF I'm using is to cover a whole cake one same color you can add the color (americolor the best in the world MHO) before adding the sugar while the marshmallow is still hot. I like to melt my marshmallow in a bowl over boiling water so I can add the water little by little but this isn't neccesary, is just my personal preference and option. icon_razz.gif

I really love working with MMF best when doing small decorations, little people, flowers... You can also add a small bit of gumpaste so it will dry harder.
Hope this helps you all.

You can heat the mmf up in to microwave for 10 or 15 seconds if it is to hard to knead.
