Strawberry Filling In Cake Disaster....helpppp

I tried several different recipes of strawberry filling using fresh strawberries but for some reason the berries are making their own juices... any one have a fool proof recipe for strawberry filling??? One that is strong and wont ooze out.

Helpppp!!!
Im desperate... I am rebaking the cakes again because the juice made them all soggy. And its a stacked cake... due Tomorrow!!!!!!!

Try straberry preserves or strawberry pie filling. See if that helps you. Quick and easy if you are in a hurry and it is already made for you. Good Luck

Any recipe that calls for sugar will macerate the berry.....Make them weep. I find that just frsh berries and Strawberry glaze (bought at the grocery store) Work great. Never had a issue.. It also helps to cut the berries and let them rest on towels. Dry berries from washing right away.

I always mix the fruit with some buttercream and let it thicken. It really makes a difference. NOTE: I usually use preserves.

I use Smuckers low sugar strawberry jam. It tastes like home made freezer jam. One of my best sellers is a lemon buttercream and strawberry jam. I've never had a problem stacking.

I have used both the stawberry gel/ glaze stuff with some fresh strawberries iun it and strawberry pie filling. Im wayyy to nervous to use a sugar/ strawberry recipe fo filling.

Thank all of you I truly appreciate it... I think Im going to forgo the "make it from scratch" and run to get me some strawberry preserves or is it jam?? which is better?

I will probably get the strawberry glaze too. What do they use in the grocery store for strawberry filling?
