Help! Buttercream Cracking Again!

The past two times I have made an 11x15 cake with buttercream icing, it has developed cracks. The cake has not been frozen at all. I'm thinking the cardboard cake board is not supportive enough. What do you guys use for an 11x15 cake? Should I be doubling the cakeboards? I can't understand why this has just now started happening?

Mine get little cracks in them if my board isn't strong enough. Try doubling your board.

I always double my boards or use actual ply wood..from the home improvement store. Im sure that is where your cracks are comming from.

Definately double board, it took me years to figure this out. Duh, I thought the people that made the boards knew how thick they needed to be. Good luck to you !!!!!!!! icon_biggrin.gif

I agree, you need a sturdier board. When the board bends, the icing cracks (and believe me, I had some early cakes with major crack problems). My local cake supply sells double strength boards for sheet cakes, and now I use either those or masonite.

Double your boards or buy the heavy duty ones.
