Christmas Cookies Help!!!!! (Long)

I have a question or two or three or a hundred lol.

I plan to make cookies and cake balls for christmas gifts this year but have spread myself extra thin with other things to do like 2 cakes for a dance on dec 9th as well as a dora cake and 24 mini cupcakes for a birthday party dec 17th.... if I bake all the cookies now will they freeze well? I don't have very much freezer space and I'll also be moving around the 2nd week fo december to make matters even tighter....

I was going to do sugar cookies, chocolate chip, and some of the ones I think they are called Spritz, with the Wilton Cookie press thingie....

Now I haven't yet made the list of how many I need or how many ppl I want to give them to but I plan to do cookies and cake balls for each person instead of a christmas gift. I know I can freeze the cake balls then take them out and dip them and set on wax paper to harden then package so those can be made ahead of time and dipped right before christmas but what about the cookies? Can I do them ahead of time and bake them and then freeze them or should I just make them up and "flash freeze" them and then package them in zip lock bags or containers and freeze until ready to bake.... Sorry lots of questions but I'm fairly new at the PRE making lol. We normally make cookies for christmas time treats (not to give but to eat lol) and mom makes me make them about a week before christmas and she stores them in ziplock bags and then in tupperware containers in her closet where the kiddies can't find them lol she uses them for cookie platters at her christmas open houses and stuff so they never sit too long but we've never tried freezing them before....

So I guess a break down of my questions is:

Can I freeze AFTER baking?
Should I cut into shapes, freeze and store, then bake closer to christmas?
Any futher ideas are welcome! icon_smile.gif Thanks in advance!!!

I'm not sure if I'm going to ice them or just make basics with colored sugar on the sugar cookies or not I don't want anything more time consuming this year with my month already booked as solid as possible with moving and unpacking and still finding a way to make three cakes and cupcakes lol

Yes, you can freeze baked cookies, just package them well. Icing is a little more particular. Plain cookies are not a problem.

I have a big bunch in the freezer already for my husband's customer gift trays.

Oh my goodness you are a life saver!!! Thank you so much! I was calling everyone and asking them and they had never heard of such thing! lol So I figured I'd better ask so I can get busy.

Thank you so much you just helped save me tons of time! icon_smile.gif I've already made the labels to put on the packages "Home-Made Cake Truffels" and "Home-Made Cookies" I just needed to find out if I could freeze those cookies lol icon_wink.gif Thanks so much!!!

If you are short on space, I would make up batches of dough and freeze it now. It will be fine till you are ready to bake. I do that alot and if the dough is made, you will be surprised how quickly the baking goes.

Also, you can make you cake balls and freeze them (undipped). Just put them in good freezer bags and let them thaw before you dip them.

Thanks Cindy I was thinking about that as well.. Thinking Chocolate Chip cookies may not taste too good after being baked then frozen lol. I was thinking of making the dough up and balling it up into a big ball and wrapping in wax paper and then plastic wrap and then into a freezer bag or container that way it's extra protected. Then taking out about 4 days before Christmas and spending the night bonding with munchkin butt and baking cookies all night and having her help me package them.

I bought some really REALLY cute!!!! boxes from Oriental Trading Company. They are similar to chinese food containers but are printed and have rope handles and are really adorable and I think she'd have fun lining with tissue paper to match and then filling with cookies and cake balls and sticking the sticker to the box lol. She's good about helping out but sometimes gets upset cause she can't decorate the cakes lol...

Anyway thanks bunches I think I'll make ahead and freeze the un-cooked dough and then bake the cookies closer to christmas that way the hard part is already done lol. icon_biggrin.gif
