Cake Tier Sizes & Bc Or Royal

Hello Everyone...

I need some help. I have to make a 3 tiered square wedding cake to feed around 150 people. What size square pans would you use to make enough servings for 150. I've looked at so many different serving charts, and they all seem to say different serving amounts per pan size. Also.. on this cake I will be writing words all around the sides of the cake.. would you do that in royal icing or can I just do it in buttercream??

Using Wilton's chart 8, 10 and 12 in squares will give you 154 servings (1x2xhight of cake). I never use royal icing only buttercream.

I don't know about the sizes but what are you covering the cakes in? BC or fondanct? If you cover the cakes in BC, don't use RI because of the oils. If you cover in fondant, use either.

According to Wilton, wedding cake servings (1x2) you will get 154 from 12-10-8. If they are wanting bigger slices, then you will need to adjust. Regarding the words, if you are covering the cake in fondant, you can use either. If you are using buttercream, you will need to write in buttercream as the shortening will break down the royal icing. Hope this helps. Make sure you post your picture and good luck!
