I'm making a big wedding order this week plus I teach full time. How soon can I start making the cake layers? What's the best way to store them without them getting dry? I don't want to freeze them and the bride wants a very moist cake.

Freezing will keep them very moist. I made my first wedding cake not too long ago and froze the layers for a few days. It didn't affect the taste at all.

If you rally don't want to freeze them, I would wrap them really well and put them in the fridge.

I have also done a weedding cake that i put in freezer and It was very moist. It was in the freezerr for three days. Just make surer you wrap it up very well. Hope this helps.

Thanks, ya'll! I had heard that it really helps but there seems to be a stigma against freezing cakes. But that would be fresher than if it sat on my counter for a week!
