My husband is the only one that eats cakes and I have been searching and searching for recipes that makes only one small (like 3 or 4 in). I would love to surprise him. He like any and all cakes so any recipe would be greatly appreciated.

for 6 inch round or 5 inch square sponge: 60g butter,caster,self raising flour and 1 egg. cook for 20-30 mins gas mark 3.

What about mini cheesecakes or the little lava cakes

I'd start with a basic white or yellow cake. Divide into correct batter amount for your pans and add different flavorings, zests, chocolate, sprinkles, etc. Bake in the pans and freeze.
When he wants one just torte, thaw, fill and frost. (Or whichever order you like to do that.)
