Rasp White Choc Creme??

A bride wants a "raspberry white chocolate creme" filling ...

Anyone out there have an easy recipe?? icon_cool.gif

You can add some melted (and cooled) white chocolate to your BC, then fold in a bit of raspberry preserves (seedless) or use the filling that comes in sleeves from the cake decorating store (or online).

If the cream she wants is whipped cream, I'd use Pastry Pride (with a tad of vanilla extract), then add the melted white chocolate, and fold in the preserves. PP can sit out for 2 days without breaking down. Whipped cream will break down in 2 hours.

Thanks for the Pastry Pride tip! I had no idea.

I found this recipe to try. What do you think of it as a filling?
White Chocolate Raspberry Cream Cheese Frosting
Beat 1 package cream cheese, softened, and ¼ c butter, softened. Add 1 package (6 oz) white baking chocolate, melted and cooled slightly, and 2 t raspberry extract. Gradually beat in 2 cups confectioners' sugar until light and fluffy after each addition.

I think the recipe you found sounds great. I also wanted to add that there is a white chocolate coffee creamer that could be added to the frosting for extra flavor.

Macsmom...........yes, that sounds VERY good. Be sure it doesn't sit out for more than a few hours since it has cream cheese in it. Since it's sealed in frosting, however, I'm sure it can set out at the reception for 5-6 hours. Be sure to keep it in the fridge until you deliver it--at the last possible minute. The car will need A/C. Be sure it doesn't sit out in front of a window at the reception site.
