I have a Marshmallow Icing recipe that calls for marshmallow creme. I don't have the creme, but I do have marshmallows. Can I just melt them and use them?

If you do that, the icing will be stickier, but that's not necessarily bad. when i'm in doubt, i ty it anyway! i have substituted marshmallow creme for marshmallows when making rice crispies and it worked really well. my BF actually preferred the taste! but they weren't as sticky, ya know?

Marshmallow icing? sounds fantatstic! would you mind to share the recipe? is it for a cake or for cookies? i think double chocolate chip cookies with marshmallow icing would be divine!

Theres a recipe for a marshmallow-like icing in the "cupcakes!" book by elinor Klivans . . . its like a modified 7 minute icing recipe. Its delicious!

I PMed the recipe to those who requested. It's a version of seven minute frosting as well. I bet it very similar to the other recipe.

Is it th emarshmallw icing in the Cake Mix Doctor Cupcake book? The one she uses on the S'mores cupcakes? I tried it last week, and it never got fluffy like it was supposed to! It just ran down the cupcakes. I have a pic of it in my photos. I followed the recipe to a T, and they were really messy to eat!

I'm not sure if they are the same . . . the one from the "cupcakes!" book isn't particularly hard but if you miss a step it can drastically alter the final product. I wonder if you didn't mix the egg whites long enough? Did the recipe you use require the use of a double boiler? The recipe I have whips the mixture, then mixes it while cooking over a double boiler, then whips it some more. It is pretty light and fluffy at first, but firms up in the fridge once its been piped on the cupcakes.

If you need help, PM me and I will send you the recipe I use. I've never had a problem with it and most of my friends love love love it!

Wow! I can't type! That last post was awful, and I can't edit now! Sorry!

I was asking because the original poster said it was a Cakemix Doctor book. That's the one I tried, and it didn't work. No eggwhite at all...it was a large jar of marshmallow cream, 1t vanilla, and 3T sour cream. I would love to try your recipe though Katie! Especially since the other one didn't work!

Seven minute type frostings don't do well in the refrigerator....I have done this frosting a billion times...it gets hard and will eventually crack off of your cake.....If you forgot the cream of tarter or corn syrup in whatever recipe you use for the seven minute type frosting it will never whip up light and fluffy, it will whip but still have a run to it.
