I normally put my cakes in the fridgerator, but I have no room today to do this. The cakes are filled with fruit preserves mixed with buttercream and the cakes are iced with the buttercream dream recipe on this site. Do I have to put these in the fridge or can these cakes possibly stay out because of the high sugar content? thanks in advance, Melissa

I use the shortening BC and I also use the fruit jam mixed with in for filling. I NEVER put my in the fridge unless it is a really hot day and I have to travel a long way to deliver it. I once read that they are fine for at least a few days. They may lose their freshness after one or two. If you are using butter in your BC someone else may have an answer for you. I can't use butter in my BC here in SA. It is much too hot.

the recipe is 1/2 butter and 1/2 crisco (and it's trying to snow here right now in MI, icon_cry.gif think I'd rather be in Texas)

They should be fine left out, I think.

LOL! It was almost 89 here today! I would enjoy some cool weather myself! They will be fine. There is no way I ever have room in my refrigerator! I might have to clean it out and that would take away from my baking!

If you have a container to put the cake in to protect it from dust or gremlins, I would put it out in your garage. If it's getting ready to snow the garage is probably as cold as your refrigerator.

shirleyw, thanks for the idea of the garage. I actually want to get a small 2nd fridgerator and put it in the garage. It was cold enough to put the cakes out there last night but I have 2 cats that sleep in the garage (I have allerges and don't have the heart to get rid of them) I put them in a spare room that is really cold since we have the heat shut off going to that room, they were fine this morning when I checked.
