i decorated my mom's bd cake today. spice cake with lemon filling and vanilla frosting.

it's sinking. i put 3 dowels where i meant to put the slice. unfortunately once the bottom layer was frosted, i couldn't see where the dowels were! i didn't realize that i didn't have it on the dowels until i went to stick one of the flowers on and it hit a hard thing. oops. missed one of the points of the triangle. plus, i probably should've used more than just 3 dowels at the corners of the slice. but it's my first tier cake ever.

another problem was that i added about a tbsp of corn syrup to about 4 cans of frosting. i was hoping to eliminate those icky air bubbles when you smooth the frosting on. well, it only slightly helped with the bubble issue. but it made my icing slumpy. it wouldn't hold the piping shape very well. the shells around the top kept wanting to slide off down the side. the side combing kept oozing down. and when i tried the roller method to smooth the top, let's just say... ick. so i made a color glaze with water & corn syrup and stippled it all over the cake with a paint brush. it covered up the mess. and after refrigerating both cake & icing, i finally got some shells on it.

there was an actual question here icon_smile.gif it is: i'd wanted to do some stippling effect on the fondant covering the slice edges, but my spray bottle that i bought the other day only did a stream not a spray and the brush didn't want to stipple on something as smooth as fondant, just flat paint. i couldn't figure out how to get the fondant to look like the spice cake inside. time ran out, the kids came home. is there anything quick i can do tonight after the kids are in bed to make that fondant look a little less flat?

(see pic in my pics folder... i can't manage to get it to attachment right)

You could take a small amount ( a couple of tablespoons) of icing and color it just a little bit lighter than the fondant. Take a piece of wax paper about 6-8 inches square and crunch it up into a ball. Dab it into the icing and then a couple of times onto a plate to get the excess off. Then lightly dab it onto the fondant to give it a lightly "splattered" look.
